  • 4 boneless skinless chicken breasts
  • 4 slices mozzarella cheese
  • 1 cup sour cream
  • 1/2 cup grated Parmesan cheese not powdered
  • 1 tablespoon corn starch
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground salt
  • 1/2 teaspoon freshly ground pepper
  • Chopped parsley for garnish
  • 1/4 cup grated Parmesan cheese not powdered

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Lightly coat a 9x13-inch baking dish with cooking spray to prevent sticking.
  • In a mixing bowl, combine the sour cream, 1/2 cup of grated Parmesan, salt, pepper, oregano, basil, garlic powder, and corn starch. Mix well until smooth.
  • Place the chicken breasts in the prepared baking dish, ensuring they are evenly spaced.
  • Top each chicken breast with a slice of mozzarella cheese.
  • Generously smother the chicken with the sour cream mixture, making sure to cover each piece well.
  • Sprinkle the remaining 1/4 cup of grated Parmesan cheese over the top.
  • Bake uncovered in the preheated oven for 45 minutes to 1 hour, or until the chicken is cooked through and the top is golden and bubbly.
  • Once done, let it cool for a few minutes before serving. Serve the cheesy chicken over rice and garnish with chopped parsley for a fresh touch.

Notes

For added flavor, consider marinating the chicken in your favorite spices for a few hours before cooking. This dish pairs wonderfully with steamed vegetables or a fresh salad.
