  • 6 strips bacon
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon crushed red pepper flakes
  • 5 cloves garlic, minced
  • 5 units tomatoes, chopped
  • 10 oz. fresh spinach
  • 3 cups chicken broth
  • 0.5 tablespoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil or parchment paper. Arrange the bacon strips on the sheet and bake for 15 to 20 minutes, or until crispy to your liking. Once done, transfer the bacon to a paper towel-lined platter to absorb excess grease and chop into 1-inch pieces.
  • While the bacon is cooking, season the chicken breasts with salt, paprika, and crushed red pepper flakes. Set aside.
  • In a large deep skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 3-4 minutes on each side until they are nicely browned. Remove the chicken from the skillet, slice it into thick strips, and return it to the skillet.
  • In the last minute of cooking the chicken, add the minced garlic and sauté for 1-2 minutes until it becomes fragrant and lightly browned.
  • Add the chopped tomatoes to the skillet and cook for 3 minutes on medium heat, allowing the tomatoes to release their juices. Then, add the fresh spinach and cook until it wilts. Stir in the chopped bacon pieces.
  • Pour in the chicken broth, add the Italian seasoning, and the heavy cream. Bring the mixture to a boil, then reduce the heat to a simmer. Gradually stir in the grated Parmesan cheese until it melts and thickens the soup slightly. Remove from heat.
  • Serve the soup immediately and enjoy the creamy goodness!

Notes

For added flavor, consider using fresh herbs like basil or oregano. You can substitute the heavy cream with a lighter option if desired, but it may alter the creaminess of the soup.
