  • 3 tablespoons salted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon mustard powder
  • 0.75 cup chicken broth
  • 1.5 cups half and half (half light cream, half milk)
  • 10 ounces Rotel tomatoes with green chilies juices reserved
  • 3 tablespoons cream cheese, softened
  • 0.33 cup Parmesan cheese, grated
  • 20 ounces refrigerated ravioli
  • 1 pinch Red Pepper Flakes optional

Instructions
 

  • Before starting, gather and measure out all the ingredients you'll need.
  • In a large skillet with high walls, melt the butter over medium-low heat. Add the minced garlic and cook for about 2 minutes, stirring constantly to avoid burning the garlic.
  • Stir in the flour and cook for an additional 2 minutes until the mixture is lightly golden. This will help thicken the sauce.
  • Add the tomato paste, onion powder, basil, oregano, and mustard powder. Mix well to combine all the flavors.
  • Slowly pour in the chicken broth while stirring continuously to prevent lumps. Follow the same process with the half and half, gradually incorporating it into the mixture. Bring the sauce to a boil, then reduce the heat to a simmer.
  • Add the softened cream cheese and the drained Rotel tomatoes. (Tip: Keep the tomato juice in case you want to adjust the sauce's thickness later.) Stir until the cream cheese is fully melted and blended into the sauce.
  • Cook the ravioli according to the package instructions, then drain them well.
  • Lower the heat of the sauce to low. Gradually sprinkle in the Parmesan cheese, stirring until it's fully incorporated and the sauce is creamy. If desired, add the red pepper flakes for a bit of spice.
  • Add the cooked ravioli to the sauce and gently combine using a silicone spatula to avoid breaking the ravioli. If needed, incorporate some of the reserved tomato juice to adjust the consistency to your liking.

Notes

For a spicier kick, consider adding more red pepper flakes or a dash of hot sauce to the sauce.
