  • 1.75 cups heavy whipping cream
  • 0.25 cup fresh parsley, chopped
  • 0.5 cup shredded parmesan cheese
  • 18 ounces fresh or frozen cheese tortellini, cooked and drained
  • 1 cup frozen green peas
  • 8 strips beef bacon, cut into bite-sized pieces and cooked until crispy
  • 2 teaspoons fresh lemon juice
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt

Instructions
 

  • In a large skillet, combine the heavy whipping cream and chopped parsley. Bring it to a simmer over medium heat, stirring occasionally to prevent burning. Let it simmer until the sauce slightly thickens, about 5-7 minutes.
  • Stir in the shredded parmesan cheese until melted and fully incorporated into the cream. This will create a rich and cheesy sauce.
  • Add the cooked tortellini, frozen green peas, and crispy beef bacon to the skillet. Gently stir to coat all the ingredients in the sauce. Simmer for an additional 3-4 minutes until the peas and tortellini are heated through.
  • Finally, stir in the fresh lemon juice, black pepper, and salt. This will brighten the flavors and balance the richness of the dish. Serve hot and enjoy!

Notes

Recipe notes: Cook the tortellini until it's 'al-dente' before adding it to the sauce. This way, it won't overcook and become mushy. Keep an eye on the sauce while simmering to prevent it from boiling over. When reheating the dish, warm it slowly on the stovetop, adding a bit of cold heavy cream and stirring gently to prevent separation.
