  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground black pepper
  • 0.5 cup sun-dried tomatoes, roughly chopped
  • 0.5 to 1 cup vegetable broth
  • 2 cans (15 oz each) butter beans, drained
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream can substitute half-and-half
  • 0.5 cup grated parmesan
  • 2 tablespoons chopped fresh basil

Instructions
 

  • Melt the butter in a large sauté pan or pot over medium heat.
  • Add garlic, salt, oregano, crushed red pepper flakes, smoked paprika, and ground black pepper. Cook for 2 minutes.
  • Stir in sun-dried tomatoes, vegetable broth, and drained butter beans. Cook uncovered for 5 minutes.
  • Remove from heat, add spinach and stir until wilted.
  • Mix in heavy cream, grated parmesan, and basil until combined.
  • Serve warm with bread, rice, or pasta.

Notes

For a lighter version, substitute heavy cream with half-and-half.
