Crispy Baked Feta and Potato Recipe

- 2 large baking potatoes
- 1 block 200g feta cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 head of garlic top cut off
- 1 lemon quartered
- 1 tbsp honey
- 1/4 cup 20g fresh basil
Preheat your oven to 200°C (390°F).
Wash and cube the potatoes. Boil them in a saucepan for 6-8 minutes, then drain and let them steam dry for 2-3 minutes.
Place the par-boiled potatoes in a baking dish. Add thyme, oregano, salt, pepper, and 2 tbsp olive oil. Mix well to coat the potatoes evenly.
Roast the potatoes for 30-40 minutes until golden, crispy, and almost cooked.
Add the feta to the center of the tray, seasoning one side before flipping it over. Squeeze half of the lemon over the feta.
Remove the garlic from the dish, let it cool, then squeeze the garlic out of its skins and mash it with a knife. Set aside.
Return the dish to the oven for another 15 minutes.
Stir the mashed garlic, juice from the other lemon half, and fresh basil into the potatoes. Gently mix the roast potatoes with the baked feta.
Drizzle honey over the dish and sprinkle shredded basil.
Serve and savor!
