  • Wash the sweet potatoes thoroughly, then cut them into quarters to create wedges. Be sure to make the wedges uniform in size for even cooking.
  • In a medium bowl, beat the eggs and set aside. This step helps the Parmesan mixture adhere to the wedges.
  • In another medium bowl, mix together the Parmesan, salt, pepper, garlic powder, dried parsley, dried oregano, paprika, and cayenne pepper. This blend of spices adds depth to the flavor.
  • Dip each sweet potato wedge into the beaten eggs, allowing any excess to drip off, then coat with the Parmesan mixture. Ensure each wedge is well-covered for maximum flavor.
