  • 4 oz. cream cheese room temperature
  • 1 15 oz. can black beans, rinsed and drained
  • 1 4 oz. can diced green chiles, drained
  • 2 green onions sliced
  • 3 dashes hot sauce optional
  • 1/8 tsp garlic powder
  • 1/8 tsp salt or to taste
  • 15 6-inch corn tortillas
  • 3 tbsp cooking oil divided, for frying

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, black beans, diced green chiles, sliced green onions, hot sauce (if using), garlic powder, and salt. Stir until everything is well mixed. Taste and adjust the seasoning if needed.
  • Stack 5 corn tortillas on a plate and cover them with a damp paper towel. Microwave for about 20 seconds to soften them, which helps prevent cracking when rolling.
  • Heat a large non-stick or cast iron skillet over medium heat.
  • While the skillet heats, take one tortilla and place about 2 tablespoons of the black bean filling in the center. Roll the tortilla tightly to enclose the filling. Repeat this process with the remaining tortillas and filling.
  • Once all five taquitos are filled, add about 1 tablespoon of cooking oil to the skillet. Allow the oil to heat until it shimmers.
  • Carefully place the filled taquitos seam side down in the skillet. Cook for about 2-3 minutes on each side, or until they are golden brown and crispy. Transfer the cooked taquitos to a clean plate.
  • Repeat the frying process in small batches of five, adding a little more oil to the skillet each time, until all the filling has been used (about 15 taquitos).
  • Serve the taquitos hot and enjoy!

Notes

For a spicier kick, feel free to add more hot sauce to the filling. You can also serve these taquitos with salsa or guacamole for dipping.
