  • 2 large eggs, beaten
  • 1 cup Ritz cracker crumbs
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon black pepper
  • 4 each chicken breasts, boneless and skinless (6 ounces each)
  • 0.5 cup butter, cut into pieces

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In two separate shallow bowls, place the beaten eggs in one and the Ritz cracker crumbs mixed with garlic salt and black pepper in the other.
  • Dip each chicken breast in the beaten eggs, ensuring it’s completely coated. This will help the cracker crumbs stick nicely.
  • Next, coat the chicken breasts evenly with the cracker mixture, pressing gently to ensure the crumbs adhere well.
  • Arrange the coated chicken breasts in a 9x13 inch baking dish, giving them a little space apart for even cooking.
  • Place the pieces of butter on top of the chicken breasts. This will melt and baste the chicken while it bakes, adding moisture and flavor.
  • Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown and cooked through. Check that the internal temperature reaches 165°F (75°C) for safe consumption.

Notes

For added flavor, consider mixing in some grated Parmesan cheese with the cracker crumbs.
