Instructions
Preheat your oven to 375°F (190°C).
In two separate shallow bowls, place the beaten eggs in one and the Ritz cracker crumbs mixed with garlic salt and black pepper in the other.
Dip each chicken breast in the beaten eggs, ensuring it’s completely coated. This will help the cracker crumbs stick nicely.
Next, coat the chicken breasts evenly with the cracker mixture, pressing gently to ensure the crumbs adhere well.
Arrange the coated chicken breasts in a 9x13 inch baking dish, giving them a little space apart for even cooking.
Place the pieces of butter on top of the chicken breasts. This will melt and baste the chicken while it bakes, adding moisture and flavor.
Bake in the preheated oven for 30-35 minutes or until the chicken is golden brown and cooked through. Check that the internal temperature reaches 165°F (75°C) for safe consumption.
Notes
For added flavor, consider mixing in some grated Parmesan cheese with the cracker crumbs.
