Main Ingredients

  • 1 lb boneless chicken thigh, cut into 1" pieces
  • 4 cloves garlic, grated
  • 1 tbsp ginger, grated
  • 2 tbsp light soy sauce
  • 1 tbsp sake
  • 1 tsp sesame oil
  • 0.5 tsp white pepper
  • 0.5 tsp salt
  • 1 cup potato starch
  • neutral oil, for frying (e.g., avocado oil)
  • lemon wedge, optional

Instructions
 

  • Cut the boneless chicken thigh into 1" pieces.
  • Marinate the chicken with grated garlic, ginger, light soy sauce, sake, sesame oil, white pepper, and salt. Cover and refrigerate for 30 minutes.
  • Dredge the marinated chicken in potato starch, ensuring a good coating.
  • Heat oil to 350°F (180°C) and fry the chicken for 4 minutes.
  • Reheat the oil and fry the chicken again for 1-2 minutes until golden brown.
  • Optional: Mix mayo, sriracha, garlic, lemon juice, salt, and pepper for dipping.
  • Optional: Squeeze lemon juice over the chicken before serving.

Notes

For extra flavor, consider marinating the chicken for a longer period, up to 24 hours, in the fridge.
