  • 6 large hard-boiled eggs, chopped
  • 0.5 cup shredded mozzarella cheese
  • 2 tablespoons mayonnaise Kewpie mayonnaise optional
  • 0.5 tablespoon sriracha
  • 2 teaspoons chives, chopped small
  • 1 pinch Kosher salt
  • 1 pinch black pepper
  • 1 spray olive or avocado oil cooking spray
  • 1 slice bread for toasting optional
  • 0.5 medium avocado for topping, optional
  • 3 slices jalapeño for garnish, optional

Instructions
 

  • In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, sriracha, chopped chives, and shredded mozzarella cheese. Season with kosher salt and cracked black pepper. Mix everything together until well combined. For a creamier texture, feel free to add more mayonnaise.

Notes

You can customize the spice level by adjusting the amount of sriracha or adding more jalapeños. This dish is best enjoyed fresh, but leftovers can be stored in the refrigerator for a day.
