Ingredients

  • 1/3 cup 110g Honey
  • 1 1/2 tsp Hot Sauce such as Frank's or Cholula
  • 3/4 tsp Chilli Flakes
  • 2 250g/9oz each Chicken Breasts
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 1/4 cup 35g Plain Flour
  • 2 Eggs beaten
  • 1 cup 65g Panko Breadcrumbs
  • 6-8 tbsp Vegetable Oil
  • 7 oz 200g Feta, crumbled

Instructions
 

  • In a bowl, mix the honey, hot sauce, and chilli flakes. Warm it in the microwave for about 20 seconds, stir, and let it cool. Alternatively, you can heat it on the stove until simmering and then cool.
  • Slice the chicken breasts horizontally to create 4 even-sized pieces. In a small bowl, combine paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
  • Prepare three shallow dishes and a large tray. In the first dish, mix flour with half of the seasoning. Place the beaten eggs in the second dish and Panko with the remaining seasoning in the third. Dredge each chicken piece in flour, then egg, and finally breadcrumbs, ensuring a thorough coating.
  • Heat enough oil to cover the pan's base over medium-high heat. Once hot, fry the chicken for 3-4 minutes on each side until golden and crispy outside and fully cooked inside (internal temperature should reach 165°F). Placing the chicken on a wire rack over the tray helps keep it crisp.
  • Top the chicken with crumbled feta, ensuring good coverage. Grill on high until the feta turns golden and slightly crisp.
  • Drizzle hot honey over the chicken to taste and serve immediately. Store any leftover honey tightly sealed in the fridge for future use.

Notes

For extra heat, increase the amount of chilli flakes or hot sauce in the honey drizzle.
