Instructions
Heat the peanut or vegetable oil in a large pan over medium heat. Make sure it doesn't boil.
In a large mixing bowl, combine the all-purpose flour, garlic powder, paprika, salt, and pepper. Mix well.
Add the eggs to the flour mixture and beat until a batter forms.
Stir in the light beer or fizzy soda until the batter is smooth.
Dip the sliced jalapeño peppers into the batter in batches, ensuring they are evenly coated.
Carefully place the battered jalapeño peppers into the hot oil in batches. Fry for about 5-6 minutes each, turning occasionally, until they are golden and crispy.
Once fried, remove the jalapeño peppers with a slotted spoon and place them on paper towels to drain. Lightly salt them while they are still hot.
Serve the crispy fried jalapeños immediately and enjoy!

For an extra kick, you can add a pinch of cayenne pepper to the batter for more heat.
