Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach (about 120 g)
  • 4 ounces feta cheese (about 115 g)
  • 2 cloves garlic minced
  • 1 teaspoon red pepper flakes optional, for heat
  • 1 to taste salt
  • 1 to taste black pepper

Instructions
 

  • In a large pot, bring salted water to a boil. Add the gnocchi and cook per package instructions until they float to the surface, usually 2-3 minutes. Remove the gnocchi with a slotted spoon and let them drain.
  • Heat olive oil in a large frying pan over medium-high heat. Add the cooked gnocchi and let them cook undisturbed for 2-3 minutes until they turn golden brown and crispy on one side.
  • Gently stir the gnocchi and continue cooking for another 2-3 minutes until they are crispy on all sides.
  • Lower the heat to medium and add the minced garlic to the pan. Sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the fresh spinach to the pan, stirring gently until it wilts, approximately 2-3 minutes.
  • Season the mixture with salt, black pepper, and red pepper flakes if desired. Remove the pan from the heat.
  • Mix in the crumbled feta cheese, allowing it to meld with the other ingredients. Serve the dish immediately on plates.

Notes

For added flavor, you can sprinkle some freshly grated Parmesan cheese on top before serving.
