  • 1.5 pounds boneless, skinless beef thighs, cut into 1-inch pieces
  • 1 jalapeño, sliced (optional)
  • 0.5 teaspoon kosher salt
  • 0.5 cup all-purpose flour
  • 0.25 cup cornstarch
  • 0.25 teaspoon coarse ground black pepper
  • Oil for frying
  • 0.25 cup soy sauce
  • 0.25 cup sugar
  • 3 tablespoons water
  • 0.5 teaspoon ground ginger
  • 2 tablespoons minced garlic

Instructions
 

  • Cut the beef thighs into 1-inch pieces and season with kosher salt and black pepper.
  • Slice jalapeño into ¼-inch thick pieces if using.
  • Heat oil in a deep pan or fryer to 350°F (175°C).
  • In a bowl, combine the flour, cornstarch, salt, and pepper. Coat the beef pieces in this mixture.
  • Carefully add about ¼ of the coated beef to the hot oil, frying in batches for 5-7 minutes until golden brown.
  • Add jalapeño slices to the oil and fry for an additional 30 seconds.
  • Remove everything from the oil and drain on paper towels.
  • In a saucepan, combine soy sauce, sugar, water, ground ginger, and minced garlic. Bring to a boil over medium heat, whisking.
  • Toss the fried beef and jalapeños in the sauce mixture until evenly coated.

Notes

For a milder dish, omit the jalapeño or remove the seeds before slicing. Serve with steamed rice or vegetables for a complete meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
