Crispy Homemade Baked Chicken Tenders

  • 1.3 lb 600g Chicken Tenders or Chicken Breast, sliced into strips & at room temp
  • 1/3 cup 50g Flour
  • 1 1/4 cups 75g Panko Breadcrumbs
  • 1 heaped tbsp Butter
  • 1 oz 30g freshly grated Parmesan
  • 1 Egg beaten
  • 2 tbsp Milk
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/8 tsp Cayenne Pepper or to taste
  • Oil Spray

Instructions
 

  • Melt 1 heaped tbsp butter in a frying pan over medium heat. Add 1 1/4 cups Panko breadcrumbs and fry until light golden. Remove from heat.
  • Preheat oven to 200°C (390°F).
  • In a small bowl, mix 1 tsp paprika, salt, 1/4 tsp onion powder, garlic powder, black pepper, and 1/8 tsp cayenne pepper.
  • Prepare 3 large bowls. In the first, combine 1/3 cup flour with 1 tsp of the spice mix. In the second, mix 1 beaten egg with 2 tbsp milk. In the third, combine breadcrumbs with 1 oz (30g) parmesan and the remaining spice mix.
  • Dip each chicken tender into the flour, then the egg, and finally the breadcrumbs, ensuring full coating at each stage.
  • Place the coated tenders on a baking tray, ensuring they are spaced out. Spray with oil and bake for 15-20 minutes until golden, crispy, and cooked through. If they start to char, reduce the heat.
  • Allow the tenders to cool on a rack for a few minutes to crisp up. Serve with your favorite dip.

Notes

For extra flavor, consider adding herbs like thyme or oregano to the breadcrumb mixture.
