  • 2 large zucchini
  • 2 large eggs
  • 2 cups panko bread crumbs
  • 0.5 cup finely grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and set it aside.
  • Slice the zucchini into thin matchsticks and place them in a bowl. Lightly sprinkle with salt and let them sit for 10 minutes to draw out excess moisture.
  • In a small bowl, whisk the eggs until well combined. In another bowl, mix together the panko bread crumbs, Parmesan cheese, salt, and pepper. For extra flavor, consider adding garlic powder or Italian seasoning to the breadcrumb mixture.
  • Dip each zucchini stick into the egg mixture, then coat it with the breadcrumb mixture. Place the coated zucchini on the lined baking sheet. Repeat this process until all the zucchini is used.
  • Bake the zucchini fries in the preheated oven for 22-25 minutes, turning them halfway through to ensure they become crispy on all sides.
  • Once golden and crispy, remove from the oven and serve immediately with your favorite dipping sauce, like marinara.

Notes

For extra flavor, consider adding garlic powder or Italian seasoning to the breadcrumb mixture. These zucchini fries pair wonderfully with marinara sauce or your favorite dipping sauce!
