  • 1 tablespoon honey

  • 1 clove minced garlic

Instructions
 

  • Preheat your air fryer to 375°F (190°C) using the air fry mode. This step is crucial for achieving that perfect crispiness.
  • In a medium-sized bowl, combine the white miso, mirin, grapeseed oil, honey, dark soy sauce, and minced garlic. Whisk until all ingredients are well mixed and set aside. This glaze is what makes the eggplant so flavorful!
  • Prepare the eggplant by cutting it into 2-inch thick rounds. Make sure the pieces are even for consistent cooking.
  • Score the eggplant slices diagonally in a crisscross pattern. This helps the sauce stick better and enhances the presentation, making it visually appealing.
  • Generously slather the miso sauce over the scored eggplant rounds, ensuring they are well coated. Don’t be shy; let the flavors soak in!
  • Place the eggplant in the air fryer basket and cook at 375°F (190°C) for 15 minutes, or until tender and caramelized. Flip halfway through for even cooking.
  • Once done, remove the eggplant from the air fryer and garnish with toasted sesame seeds and chopped green onions before serving. This adds a lovely crunch and color!

Notes

For a little extra flavor, consider adding a sprinkle of chili flakes to the miso sauce for a spicy kick. This dish pairs wonderfully with rice or as a side to your favorite protein.
