  • 1.5 lbs red potatoes
  • 1.5 tsp kosher fine salt
  • 1 Tbsp extra virgin olive oil Vegetable or canola oil works too
  • 4 cloves garlic, minced
  • 1 medium white onion, thinly sliced
  • 2 tsp chopped chives
  • 1 tsp flaky salt
  • 0.5 tsp freshly cracked black pepper

Instructions
 

  • Preheat your oven to 400˚F (200˚C).
  • Cut the red potatoes into quarters. Place them in a pot, cover with water, and add kosher salt. Bring to a boil. Tip: Make sure the potatoes are cut evenly for consistent cooking.
  • Once boiling, remove from heat, drain, and set aside.
  • While the potatoes are cooking, add olive oil and minced garlic to a rimmed baking sheet or baking dish. Place in the preheated oven for 5-7 minutes. Tip: This step infuses the oil with garlic flavor, enhancing the overall taste.
  • Carefully remove the hot pan from the oven. Add the parboiled potatoes in a single layer, cut side down, without overlapping.
  • Roast for 30-35 minutes until the bottoms are golden brown and crispy. Then, flip the potatoes so the other cut side is down and sprinkle sliced onions on top.
  • Roast for an additional 20-30 minutes until the potatoes are crispy. Stir occasionally to prevent burning the onions. Tip: Keep an eye on the onions; you want them caramelized but not burnt.
  • Once done, top with flaky sea salt, black pepper, and chopped chives. Tip: For extra flavor, consider adding fresh herbs like rosemary or thyme before roasting.
