  • 1 pound ground beef
  • 1 unit green bell pepper, sliced
  • 1 unit onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth low or no sodium recommended
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 19 ounces frozen cheese tortellini, thawed
  • 0.5 cup heavy cream or half-and-half for a lighter option
  • 8 ounces shredded mozzarella cheese or a blend of cheeses

Instructions
 

  • In a skillet over medium heat, cook and crumble the ground beef until it’s no longer pink. Drain any excess grease to keep the dish lean and healthy.
  • Transfer the cooked ground beef to a 5-6 quart slow cooker. Add the sliced green bell pepper and onion to enhance the flavors and add nutrition.
  • In a medium bowl, whisk together the minced garlic, beef broth, Worcestershire sauce, salt, and black pepper. Pour this mixture over the beef and vegetables in the slow cooker.
  • Cover and cook on low for 3 hours, allowing the flavors to meld beautifully. This slow cooking method ensures every bite is packed with flavor.
  • After 3 hours, add the thawed cheese tortellini to the slow cooker, stirring gently to combine. Cover and continue cooking on low for an additional 30 minutes to 1 hour, until the tortellini is warmed through.
  • Once the tortellini is ready, stir in the heavy cream and half of the shredded mozzarella cheese. Gently mix until combined for a creamy texture.
  • Top with the remaining mozzarella cheese, cover, and let it melt for about 5 minutes before serving. This step adds an irresistible cheesy layer on top!

Notes

For a little extra flavor, consider adding some Italian seasoning or crushed red pepper flakes. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
