Crock Pot Ranch Chicken Sandwiches

Ingredients
  

  • - 1-2 lbs 450-900g boneless, skinless chicken breasts
  • - 16 ounces 450g cream cheese, cubed
  • - 2 tablespoons ranch seasoning mix or 1 packet
  • - 2 cups 200g cheddar cheese, shredded
  • - 12 slices bacon cooked and chopped
  • - 4 scallions chopped
  • - Buns

Instructions
 

  • Place the chicken breasts in the bottom of a 6-quart slow cooker.
  • Sprinkle the ranch seasoning over the chicken.
  • Add the cubed cream cheese on top of the chicken.
  • Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  • Once the chicken is cooked, shred it using two forks and mix well with the cream cheese sauce.
  • Stir in the crumbled bacon, scallions, and 1 ½ cups of cheddar cheese.
  • Sprinkle the remaining cheese on top.
  • Cover and let the cheese melt for 10 minutes.
  • Serve the creamy bacon ranch chicken on buns.

Notes

You can customize these sandwiches by adding avocado slices, lettuce, or tomato.
