  • 1 tablespoon extra-virgin olive oil
  • 2 pounds boneless skinless chicken breasts or thighs
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 jar roasted red peppers, drained and chopped (12 ounces)
  • 1 cup kalamata olives, drained
  • 1 medium red onion, cut into ½-inch chunks
  • 3 tablespoons red wine vinegar
  • 1 tablespoon minced garlic (about 3 large cloves)
  • 1 teaspoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme leaves
  • 0.5 cup feta cheese (optional for serving)
  • 1 bunch chopped fresh herbs (any mix of fresh basil, parsley, or thyme)

Instructions
 

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray.
  • Heat the olive oil in a large skillet over medium-high heat. This step adds a lovely depth of flavor to your chicken.
  • Season the chicken with salt and pepper, then place it in the hot skillet, seasoned side down. Let it brown for 1 to 2 minutes until golden, then flip and brown the other side for an additional minute. If your skillet is too small, work in batches to avoid overlapping. Browning the chicken helps seal in flavors.
  • Transfer the browned chicken to the slow cooker.
  • Arrange the chopped roasted red peppers, kalamata olives, and onion around the chicken in the slow cooker (do not place them on top of the chicken). This allows the vegetables to cook evenly.
  • In a small bowl or measuring cup, whisk together the red wine vinegar, minced garlic, honey, oregano, and thyme. Pour this mixture over the chicken and vegetables in the slow cooker.
  • Cover and cook on high for 1 ½ to 2 hours or on low for 3 to 4 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remember to check the chicken for doneness to ensure it’s perfectly cooked.
  • Serve warm, sprinkled with feta cheese and fresh herbs for an added touch of flavor and visual appeal.

Notes

No alcoholic drinks allowed, please substitute with a non-alcoholic option. For a heartier meal, serve this dish over rice or with crusty bread. Feel free to add other vegetables like zucchini or bell peppers for extra flavor and nutrition.
