  • 1.5 pounds beef (round steak, cube steaks, or minute steaks)
  • 2 whole carrots, sliced into 1-inch pieces
  • 1 rib celery, sliced into 1-inch pieces
  • 0.5 whole yellow onion, sliced ½-inch
  • 2 cloves garlic, sliced
  • 0.25 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 14.5 ounces can diced tomatoes with juices
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon dried thyme leaves
  • 1 teaspoon Salt and black pepper to taste
  • optional Cornstarch (optional, for thickening)

Instructions
 

  • Start by adding the sliced carrots, celery, onion, and garlic to the bottom of your slow cooker. This forms a flavorful base for the stew.
  • If using round or minute steaks, pound them to about ¼ inch thickness and season with salt and pepper. Cube steaks can skip this step. Dredge each steak in flour on a shallow plate to help thicken the sauce.
  • Heat the olive oil in a skillet over medium-high heat. Brown the steaks for about 2 minutes on each side, adding more oil if necessary. This step enhances the flavor of the beef.
  • Once browned, transfer the steaks to the slow cooker. Add the beef broth, diced tomatoes (with juices), tomato paste, Worcestershire sauce, dried thyme, and additional salt and pepper.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 4-5 hours, until the steaks are fork-tender. Be patient; the longer it cooks, the better the flavors meld together.
  • If you prefer a thicker stew, mix a little cornstarch with water and stir it into the stew during the last 30 minutes of cooking. This will give your stew a nice, hearty texture.
  • Serve your delicious beef stew over mashed potatoes or noodles for a comforting meal. Enjoy each bite of this hearty dish!

Notes

For added flavor, consider adding potatoes or other vegetables to the stew. This stew can be made ahead of time and reheated for an easy meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
