  • 1.5 lb chicken breasts boneless, skinless
  • 1 medium red bell pepper diced
  • 0.5 large yellow onion diced
  • 2 cloves garlic chopped
  • 0.5 cup creamy peanut butter
  • 0.5 cup chicken broth
  • 0.25 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste
  • 1 tbsp lime juice
  • 2 tbsp cilantro chopped

Instructions
 

  • Place the diced bell pepper, onion, and garlic in the bottom of your slow cooker.
  • Add the chicken breasts on top of the vegetables.
  • In a separate bowl, mix the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
  • Pour the sauce over the chicken in the slow cooker.
  • Cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours.
  • Once cooked, stir in lime juice and cilantro.
  • Serve over rice or noodles and enjoy!

Notes

For a thicker sauce, you can mix a little cornstarch with water and add it to the slow cooker 30 minutes before the end of cooking time.
