Chipotle Dressing Ingredients
0.5cupsour cream
0.5cupmayonnaise
0.25cupfresh lime juiceabout 2 limes

Instructions
In a large bowl, combine the coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Mix well until evenly combined. Tip: Make sure to rinse the black beans thoroughly to remove excess sodium.
In a separate medium bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth, creating about 1 ¼ cups of chipotle dressing.
When ready to serve, pour the chipotle dressing over the coleslaw mixture. Tip: Toss gently to ensure every ingredient is coated without bruising the vegetables.
Add all but a handful of the Chili Cheese Fritos to the coleslaw and gently toss to coat all ingredients.
Just before serving, sprinkle the remaining handful of Chili Cheese Fritos on top for extra crunch.
Serve immediately and enjoy the crunchy Southwest flavors.
