  • 0.75 cup dairy-free butter, softened or regular butter if not dairy-free
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 0.75 tsp salt
  • 0.75 tsp baking soda
  • 2.125 cups all-purpose flour
  • 0.5 cup dairy-free chocolate chips or chopped chocolate semisweet recommended

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside for later.
  • In a mixing bowl (using a stand mixer with a paddle attachment or a handheld mixer), combine the softened butter, granulated sugar, and light brown sugar. Mix on medium speed until the mixture is light and fluffy, about 1-2 minutes.
  • Add the egg and vanilla extract to the butter-sugar mixture. Beat until just combined—be careful not to over-mix!
  • Gradually mix in the dry ingredients until a dough forms. Gently fold in the chocolate chips or chopped chocolate until evenly distributed.
  • Using a medium cookie scoop or a spoon, portion out 1.5-2 tablespoons of dough and place them on the prepared baking sheets, spacing them about 3-4 inches apart.
  • Bake the cookies one sheet at a time for 8-11 minutes. They should look set around the edges but may appear under-baked in the center.
  • Once baked, remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For a fun twist, try adding nuts or dried fruit to the cookie dough. Store any leftover cookies in an airtight container to keep them fresh.
