Ingredients
  

  • 1 14 oz can sweetened condensed milk
  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup peanuts roughly chopped
  • 1-2 sleeves Ritz crackers

Instructions
 

  • Line a cookie sheet with parchment paper and place the Ritz crackers in a single layer on it.
  • In a small saucepan over medium heat, combine sweetened condensed milk, butter, and brown sugar. Cook for 7-8 minutes, stirring frequently.
  • Reduce the heat to low and whisk in the milk, vanilla extract, and chopped peanuts until the mixture is smooth. Cook for an additional 2 minutes until thick, then remove from heat.
  • Use a cookie scoop to spoon the caramel mixture onto each Ritz cracker.
  • Allow the cookies to cool completely before storing them in an airtight container.

Notes:
For a variation, you can sprinkle a pinch of sea salt on top of each cookie before the caramel sets for a delicious sweet and salty contrast.
