Ingredients

  • 2 tablespoons oil
  • 1 pound ground beef
  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 2 cloves garlic, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour (use gluten-free if needed)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce (use gluten-free if needed)
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
  • 2 bay leaves (optional)
  • 1 cup peas
  • Salt and pepper to taste
  • 4 cups hot mashed potatoes

Instructions
 

  • Heat oil in a pan over medium-high heat.
  • Add the ground beef and cook, breaking it apart as it cooks, until no longer pink, about 7-10 minutes.
  • Drain off excess grease, leaving about 2 tablespoons in the pan.
  • Add diced onions and carrots to the pan. Cook until tender, about 5-7 minutes.
  • Stir in the garlic and tomato paste. Sprinkle in the flour, mix well, and cook for about a minute.
  • Pour in the beef broth, cooked meat, Worcestershire sauce, rosemary, thyme, and bay leaves. Bring to a simmer and cook until the sauce thickens, around 5-7 minutes.
  • Remove the bay leaves, add peas, and season with salt and pepper to taste.
  • Serve the flavorful mixture over a bed of hot mashed potatoes.

Notes

For a crispy topping, broil the assembled shepherd's pie in the oven for a few minutes until the mashed potatoes turn golden brown.
