Preheat the oven to 350°F (175°C) and grease a 13x9 casserole dish with non-stick cooking spray.
In a large skillet, cook the ground beef, onion, bell pepper, and garlic over medium heat until the meat is fully cooked, about 8-10 minutes. Remember to drain the fat to keep the dish lighter.
Add both salsas, taco seasoning, and chicken stock to the skillet. Cook for an additional 4-5 minutes until the liquid reduces and thickens. Remove from heat.
In a large bowl, mix the meat mixture with sour cream, black beans, cream of mushroom soup, and half of the shredded cheese. This combination adds creaminess and flavor!
Spread 2 cups of crushed Doritos in the greased casserole dish. Top with half of the meat mixture. Repeat the layers, ending with the meat mixture. Finally, add the remaining 2 cups of Doritos and the remaining cheese on top for that cheesy goodness.
Cover the casserole with non-stick foil and bake for 30 minutes. After that, remove the foil, sprinkle the remaining cheese, and bake uncovered until the cheese is melted and bubbly, about 10-15 minutes more.
Let the casserole cool for 10 minutes before serving. Garnish with fresh tomato, lettuce, cilantro, diced tomatoes, olives, and sour cream for an appealing presentation.

For a spicier kick, consider using hot salsa or adding jalapeños to the layers.
