  • 1 tablespoon olive oil
  • 0.5 cup diced yellow onion
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 20 ounces red enchilada sauce
  • 10 ounces tomato soup
  • 10 small tortillas
  • 3 cups shredded cheddar cheese

Instructions
 

  • If using a Dutch oven outside or for camping, prepare 24 charcoal briquettes. Alternatively, preheat your oven to 375°F.
  • Heat olive oil in the Dutch oven over the briquettes or on the stove over medium-high heat. Tip: Using a Dutch oven on the stove gives you better control over the heat.
  • Add diced onion and cook until softened and translucent, about 4-5 minutes. Tip: Stir occasionally to prevent burning.
  • Add ground beef to the pan and cook until fully browned, breaking it apart as it cooks.
  • Stir in taco seasoning, salt, and pepper, ensuring the meat is evenly coated.
  • Remove the cooked meat from the Dutch oven and drain any excess grease.
  • In a medium bowl, mix the enchilada sauce and tomato soup until well combined.
  • Spread 1/2 cup of the enchilada sauce mixture on the bottom of the Dutch oven.
  • Layer tortillas evenly over the sauce, breaking some to fill any gaps. Tip: This ensures every bite is flavorful.
  • Spoon 1/3 of the meat mixture onto the tortillas.
  • Pour 1/2 cup of enchilada sauce over the meat and top with 2/3 cup of cheese.
  • Add another layer of tortillas, then repeat the meat, sauce, and cheese layers.
  • Finish with the remaining meat, sauce, and a generous amount of cheese on top.
  • Cover the Dutch oven with its lid.
  • Place 8 briquettes under the Dutch oven and 16 on top of the lid if using charcoal, or simply bake in the preheated oven.
  • Bake for 25-30 minutes until heated through and the cheese is golden. Tip: Keep an eye on it to avoid overcooking.
  • If baking in the oven, remove the lid and bake an additional 5-10 minutes to allow the cheese to brown.
  • Serve hot with your favorite toppings such as sour cream, avocado, or fresh cilantro. Enjoy!
