  • 1.5 cup orzo pasta
  • 2 piece boneless skinless chicken breasts, cut into strips
  • 1 piece zucchini, sliced
  • 1 piece red bell pepper, diced
  • 1 piece yellow bell pepper, diced
  • 3 clove garlic, minced
  • 2 tablespoon olive oil
  • 3 cup chicken broth
  • 1 package Boursin garlic and herb cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a large baking dish.
  • In a bowl, season the chicken strips with salt, black pepper, paprika, and Italian seasoning for enhanced flavor.
  • In a skillet, heat olive oil over medium heat. Brown the seasoned chicken strips until golden, about 5-7 minutes. Once cooked, set aside.
  • In the same skillet, add garlic, zucchini, and bell peppers. Sauté until slightly softened, approximately 3-5 minutes. This step adds flavor and texture to your dish.
  • In the greased baking dish, combine the orzo, sautéed vegetables, browned chicken, chicken broth, and Boursin cheese. Gently stir to mix all the ingredients together.
  • Cover the baking dish with foil and bake for 30 minutes. This allows the flavors to meld and the orzo to cook properly.
  • After 30 minutes, uncover the dish and bake for an additional 10 to 15 minutes. The dish should be creamy and lightly golden on top.
  • Once out of the oven, garnish with freshly chopped parsley and serve warm. Enjoy the comforting flavors!

Notes

You can customize this dish by adding other vegetables like cherry tomatoes or spinach for extra flavor and nutrition.
