  • 14 ounces smoked sausage, sliced
  • 1 cup onion, chopped
  • 1 cup bell pepper, seeded and chopped
  • 1 cup celery, chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 10 ounces frozen cauliflower rice

Instructions
 

  • Heat a large skillet over medium heat. Add the sliced sausage and cook for 2-3 minutes on each side until golden brown. Once cooked, remove the sausage from the pan and set it aside.
  • In the same skillet, add the chopped onion, bell pepper, celery, and minced garlic. Sauté for about 2 minutes, stirring occasionally until the vegetables start to soften.
  • Sprinkle in the paprika, onion powder, garlic powder, and salt. Stir well to combine the spices with the vegetables.
  • Add the frozen cauliflower rice to the skillet. Mix everything together so the spices are evenly distributed.
  • Reduce the heat to medium-low and cook the mixture for about 7 minutes, stirring occasionally. You’ll know it’s ready when there’s no steam coming from the dish, indicating that all the moisture has evaporated.
  • Finally, return the cooked sausage to the skillet and warm everything through for a couple of minutes.

Notes

Feel free to add other vegetables like zucchini or spinach for extra nutrition. For a bit of heat, consider adding a pinch of red pepper flakes.
