  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil
  • 2.5 cups green beans trimmed and cut into 1-inch pieces
  • 1 pound boneless skinless chicken breasts cut into 1-inch pieces
  • 2 teaspoons minced garlic
  • 0.25 cup low sodium chicken broth or water
  • 0.25 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • Salt and pepper to taste

Instructions
 

  • In a large pan, heat 1 teaspoon of vegetable oil over medium heat. Add the green beans and sauté for 3-4 minutes until they are tender. Once done, remove them from the pan and cover to keep warm.
  • Wipe the pan clean and increase the heat to high. Add the remaining tablespoon of oil. Season the chicken pieces with salt and pepper, then add them to the pan in a single layer. Cook for 3-4 minutes on each side until they are golden brown and cooked through.
  • Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  • Return the cooked green beans to the pan and stir everything together. Cook for another 2 minutes until the green beans are warmed through.
  • In a separate bowl, whisk together the chicken broth, soy sauce, and honey. In a small bowl, mix the cornstarch with 1 tablespoon of cold water until smooth.
  • Pour the soy sauce mixture over the chicken and green beans in the pan. Cook for 30 seconds, then whisk in the cornstarch mixture. Bring to a boil and cook for 1 more minute, stirring constantly until the sauce thickens.
  • Enjoy your delicious chicken and green beans immediately, and consider serving it over rice for a complete meal!

Notes

For added flavor, you can sprinkle sesame seeds on top before serving. Feel free to add other vegetables like bell peppers or carrots for extra color and nutrition.
