  • 1 tablespoon avocado oil
  • 1 pound boneless skinless chicken, cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 4 cups shredded green cabbage
  • 1 large carrot, chopped
  • 1 large red bell pepper, thinly sliced
  • 2 tablespoons coconut aminos
  • 1 tablespoon toasted sesame oil
  • rice, soba noodles, or quinoa for serving

Instructions
 

  • Heat the avocado oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces and cook for about 5 minutes, or until they are cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic, shredded cabbage, chopped carrot, and sliced red bell pepper. Cover and stir-fry for another 5 minutes, until the vegetables are cooked and slightly softened.
  • Return the cooked chicken to the skillet. Add the coconut aminos and toasted sesame oil, stirring to combine. Cook for an additional 2-3 minutes on medium-low heat to allow the flavors to meld together.
  • Serve the stir-fry over rice, soba noodles, or quinoa. Sprinkle with sesame seeds if desired.

Notes

For added flavor, consider adding a splash of lime juice or a sprinkle of crushed red pepper flakes. You can customize this stir-fry by adding other vegetables like broccoli or snap peas.
