  • 10 eggs eggs
  • 0.5 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 0.5 cup cooked crumbled beef bacon or sausage (optional)
  • 0.5 cup chopped turkey (optional)
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Generously spray a muffin tin with non-stick cooking spray to prevent sticking.
  • Chop your vegetables, and if you’re using beef bacon, cook it until crispy, then chop into small pieces.
  • In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper until frothy. This will help make your egg bites light and fluffy.
  • Distribute the chopped veggies, meat, and cheese evenly into each muffin tin cavity.
  • Pour or spoon the egg mixture into each cavity, filling them about 3/4 full to allow for rising.
  • Gently stir each muffin cavity with a fork to mix the ingredients, ensuring a balanced flavor in every bite.
  • Bake in the oven for 12-18 minutes until the egg bites are set and slightly golden on top. Keep an eye on them to avoid overcooking!
  • Let the egg bites cool for a few minutes, then gently remove them from the tin using a fork or spatula.
  • Serve warm and enjoy! Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 2 months. To reheat, simply microwave for about 10 seconds.
