  • 1.5 pounds chicken breast, cut into chunks
  • 0.125 teaspoon salt
  • 0.125 teaspoon pepper
  • 2 teaspoon avocado oil
  • 1 medium green pepper, cut into chunks
  • 1 medium white onion, cut into chunks
  • 0.25 cup roasted cashews
  • 1 tablespoon rice wine vinegar

Instructions
 

  • In a bowl, combine the sauce ingredients: liquid aminos, sesame oil, ground ginger, minced garlic, chili garlic sauce, salt, and pepper. Mix well and set aside.
  • Heat a pan over low heat and toast the cashews until they are lightly browned. Remove from the pan and set aside.
  • Increase the heat to high and add the avocado oil to the pan. Once hot, add the chicken chunks and cook until fully cooked through, about 5-7 minutes.
  • Add the chopped green pepper and onion to the pan, then pour in the prepared sauce mixture. Cook on high for about 5 minutes, stirring occasionally.
  • Stir in the liquid aminos, toasted cashews, and rice wine vinegar. Continue cooking until the sauce has thickened, about 2-3 minutes.
  • Remove from heat, sprinkle with sesame seeds and chopped green onions for garnish, and serve hot!

Notes

For a vegetarian option, substitute chicken with tofu. Feel free to add other vegetables like broccoli or snap peas for extra color and nutrition. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
