  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2.25 cups chicken broth
  • 15 oz nacho cheese sauce
  • 10 oz Rotel
  • 1.5 cups uncooked long-grain white rice

Instructions
 

  • Cut the chicken into small, bite-sized pieces or strips, about 1 inch in size.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and sprinkle with garlic powder, onion powder, cumin, salt, and black pepper.
  • Cook the chicken until it reaches an internal temperature of 165°F, stirring frequently. Drain any excess liquid if needed.
  • Stir in the chicken broth, nacho cheese sauce, and Rotel. Bring the mixture to a boil.
  • Add the uncooked rice to the skillet and stir well.
  • Cover the skillet with a lid, reduce the heat to medium-low, and cook for 20-25 minutes or until the rice is tender and has absorbed all the liquid.
  • Serve hot with your favorite taco toppings like sour cream, pico de gallo, chopped tomatoes, and sliced avocado.
