  • 16 ounces breakfast sausage
  • 4 large eggs, lightly beaten
  • 1 cup sharp cheddar cheese, shredded
  • 0.25 cup green onions, sliced
  • 1 cup Bisquick™ Original Pancake & Baking Mix

Instructions
 

  • Preheat your oven to 350°F (177°C). Prepare a 12-cup muffin pan with liners or grease it well to prevent sticking.
  • In a 12-inch skillet over medium-high heat, cook and crumble the breakfast sausage until no pink color remains. This should take about 5-7 minutes. Place the cooked sausage on a paper towel-lined plate to absorb excess grease and let it cool for about 10 minutes.
  • In a medium mixing bowl, combine the beaten eggs, shredded cheddar cheese, sliced green onions, cooked sausage, and Bisquick™ Original Pancake & Baking Mix. Mix until all ingredients are well combined. Make sure not to overmix, or the muffins may become tough!
  • Fill each muffin cup about 3/4 full with the mixture, ensuring even distribution for uniform baking.
  • Bake in the preheated oven for approximately 20 minutes or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean.
