In a 12-inch skillet over medium-high heat, cook and crumble the breakfast sausage until no pink color remains. This should take about 5-7 minutes. Place the cooked sausage on a paper towel-lined plate to absorb excess grease and let it cool for about 10 minutes.
In a medium mixing bowl, combine the beaten eggs, shredded cheddar cheese, sliced green onions, cooked sausage, and Bisquick™ Original Pancake & Baking Mix. Mix until all ingredients are well combined. Make sure not to overmix, or the muffins may become tough!
Fill each muffin cup about 3/4 full with the mixture, ensuring even distribution for uniform baking.
Bake in the preheated oven for approximately 20 minutes or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean.
