  • 7 oz enoki mushrooms
  • 1 lb thinly sliced beef ribeye, sirloin, or brisket
  • 1 tbsp avocado oil or any neutral flavored oil
  • 1 unit onion thinly sliced
  • 2 unit eggs whisked
  • unit green onions chopped for garnish
  • unit sesame seeds for garnish

Instructions
 

  • Trim the bottom 1-2 inches off the enoki mushrooms and rinse them under running water. Separate the mushrooms into 1/4-inch bundles. Make sure to handle them gently to maintain their shape.
  • Roll each bundle of mushrooms in a slice of beef. Repeat with all the beef and mushrooms, ensuring each bundle is well-wrapped. This helps the flavors meld beautifully during cooking.
  • Mix all the sauce ingredients in a bowl and set aside. This step can be done ahead of time for convenience.
  • Heat avocado oil in a large skillet over medium-high heat. Add the sliced onions and cook until slightly softened, about 3 minutes. Stir occasionally to prevent burning.
  • Place the enoki beef rolls over the onions in a single layer, then pour the sauce over the rolls. Cover the skillet to trap the steam and enhance the cooking process.
  • Once the sauce boils, reduce the heat to simmer and cook for 3-4 minutes until the beef is cooked through. Keep an eye on it to avoid overcooking.
  • Uncover the skillet and pour the whisked eggs over the rolls. Cover and cook for 1 minute. This will create a delightful, fluffy egg layer on top.
  • Remove from heat and garnish with chopped green onions and sesame seeds. Serve over a warm bowl of rice for a complete meal.

Notes

Recipe notes: You can prepare the rolls in advance and store them in the refrigerator until you're ready to cook. Just be sure to keep the sauce separate until you're ready to heat everything up.
