  • 1.5 lbs skinless, boneless chicken breasts (3-4 small or 2 large, split lengthwise)
  • 2 bell peppers (1 red, 1 green), seeded and cut into strips
  • 1 medium onion, minced
  • 1 teaspoon cumin powder
  • 1.5 teaspoons chili powder
  • 1 teaspoon garlic powder (or 1 clove minced garlic)
  • 2 teaspoons paprika
  • 0.5 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 cup shredded mozzarella cheese (or your favorite cheese)
  • 1 Fresh chopped cilantro or parsley for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish to prevent sticking.
  • On a shallow plate, place the chicken breasts. Sprinkle cumin, chili powder, garlic powder, paprika, salt, and pepper on both sides of the chicken. Reserve some spices for the vegetables.
  • Arrange the seasoned chicken breasts in the prepared baking dish. Drizzle with vegetable oil. Top with the bell peppers and onion, then sprinkle the reserved spices over the vegetables. Finish by adding the shredded mozzarella cheese on top.
  • Bake the casserole in the preheated oven for 20-30 minutes, depending on the thickness of the chicken. The chicken is done when it reaches an internal temperature of 165°F (74°C). For a crispy top, broil for an additional 2 minutes at the end.
  • Serve the fajita chicken casserole immediately over cauliflower rice, steamed vegetables, zucchini noodles, or enjoy it as is!

Notes

Feel free to mix and match your favorite vegetables or cheeses for a personalized touch. For added flavor, consider marinating the chicken in the spices for a few hours before cooking.
