  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 14 ounces sliced deli roast beef
  • 0.5 cup unsalted butter, melted
  • 1.5 tablespoons dried onion soup mix
  • 3 cups water
  • 1 tablespoon fresh chopped parsley for garnish (optional)

Instructions
 

  • In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the sliced onion and coat it in the butter. Cook for about 12-15 minutes, stirring occasionally, until the onions are soft and browned but not burnt.
  • Stir in the minced thyme, kosher salt, and black pepper. Remove from heat and set aside.
  • Preheat your oven to 350°F (175°C). Carefully take the sweet rolls out of the package, keeping them intact. Use a large knife to slice the rolls in half horizontally, separating the tops from the bottoms. Place the bottom halves, cut side up, into an 11x7 inch baking dish.
  • Layer half of the provolone cheese on top of the bottom halves of the rolls. Next, add the sliced roast beef evenly over the cheese. Spread the cooked onions on top of the beef, then add the remaining provolone cheese. Finally, place the tops of the rolls back on.
  • In a small bowl, mix together the melted butter and dried onion soup mix. Brush this mixture evenly over the tops of the rolls, or pour it on if you prefer.
  • Cover the baking dish loosely with foil, ensuring the foil does not touch the tops of the rolls. Bake for 25 minutes. Remove the foil and bake for an additional 5 minutes to allow the tops to brown.
  • While the rolls are baking, prepare the au jus according to the package directions using 3 cups of water.
  • Serve the sliders warm, garnished with fresh chopped parsley if desired, alongside the au jus for dipping.

Notes

For a little extra flavor, consider adding some sliced jalapeños or roasted red peppers to the beef layer. These sliders can be made ahead of time and baked just before serving for a quick and delicious meal.
