Instructions
Preheat your oven to 350°F (175°C) and line a 9x5-inch loaf pan with aluminum foil.
In a large pot over medium-high heat, add olive oil and onions with baking soda. Cook for about 15 minutes, stirring occasionally.
Continue cooking until onions turn deep golden-brown, about 10-15 minutes more.
In a large bowl, mix breadcrumbs and milk. Let it sit for a few minutes.
Add caramelized onions, garlic, Worcestershire sauce, salt, and pepper. Combine well.
Add ground beef and eggs to the bowl. Gently mix with your fingers.
Transfer the meat mixture to the loaf pan, pressing it into an even layer.
Bake for 55-60 minutes until the middle reaches 165°F (74°C).
Remove from the oven and switch to broil. Sprinkle reserved caramelized onions and Gruyère cheese on top.
Broil for about 2 minutes until the cheese bubbles and browns.
Let the meatloaf cool in the pan for 15 minutes, then slice and serve.
Notes
For added flavor, consider mixing in fresh herbs like thyme or rosemary into the meat mixture.
