  • 1.5 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions
 

  • In a large bowl, mix the chopped strawberries, plain Greek yogurt, honey, and vanilla extract until well combined. Make sure to fold gently to keep the strawberries intact.
  • Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters, making around 10 clusters. Use a spoon or an ice cream scoop for even sizes.
  • Freeze the clusters on the baking sheet until solid, about 1-2 hours. Make sure they are not touching each other to ensure easy removal later.
  • Meanwhile, melt the chocolate in a microwave-safe bowl with coconut oil, heating in 15-30 second intervals and stirring until smooth. Be careful not to overheat the chocolate.
  • Dip each frozen yogurt cluster into the melted chocolate, ensuring they are fully coated. Place them back on the baking sheet. You can sprinkle a pinch of sea salt on top if desired for a flavor boost.
  • Return the clusters to the freezer for a few minutes to set the chocolate and firm up the yogurt. This will help keep the shape intact when serving.
