Instructions
Heat 2 inches of oil in a large heavy-bottom pan to 350°F (175°C), ensuring there is at least 2 inches of space from the oil to the top of the pan. This is crucial for safe frying!
In a large bowl, whisk together the flour, sugar, baking powder, and salt until fully combined. This will create a nice base for your batter.
Whisk in the milk, eggs, and vanilla extract until smooth, creating a thick pancake-like batter. Make sure there are no lumps for the best texture.
Fill a piping bag with the batter. Quickly pipe 4-5 small parallel tubes into the hot oil. Cook for 2-3 minutes or until golden on all sides. Remember to rotate them in the oil as they cook to ensure all sides are evenly cooked.
Remove the fries from the oil and drain them on a paper towel-lined plate to absorb excess oil.
Repeat the piping and frying process until all the batter is used. Be careful not to overcrowd the pan, as this can lower the oil temperature.
