Instructions
In a small bowl, thoroughly mix the unsalted butter, chopped parsley, grated garlic, kosher salt, and freshly ground black pepper.
Spread about 1 Tbsp. of the butter mixture on one side of each bread slice.
Place 2 bread slices, butter side down, in a large nonstick skillet over medium heat.
Divide the coarsely grated cheddar cheese evenly between the bread slices in the skillet.
Top with the remaining bread slices, butter side up, creating a sandwich.
Cook the sandwiches for about 4 minutes on each side until they are golden brown underneath and the cheese is melted.
Carefully flip the sandwiches halfway through cooking to ensure even browning.
Once both sides are golden brown and the cheese has melted, transfer the sandwiches to a cutting board. Slice them in half for easy handling.
