  • 8 ounces jumbo pasta shells
  • 1.5 cups shredded rotisserie chicken
  • 1 cup full-fat ricotta cheese
  • 0.33 cup freshly grated Parmesan cheese
  • 0.33 cup freshly grated mozzarella cheese
  • 0.33 cup sour cream
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon kosher salt
  • 2 tablespoons salted butter
  • 2 cloves garlic, minced
  • 1.5 cups heavy cream
  • 0.5 cup freshly grated Parmesan cheese
  • 0.5 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring about 4 quarts of water to a rolling boil. Add 1 tablespoon of salt to season the water.
  • Carefully add the jumbo pasta shells to the boiling water, stirring gently to prevent sticking. Cook according to the package instructions, usually around 9 minutes.
  • Once cooked, drain the pasta in a colander and set the shells aside.
  • In a mixing bowl, combine the shredded chicken, ricotta cheese, Parmesan cheese, mozzarella cheese, sour cream, Italian seasoning, black pepper, and salt. Mix until well combined.
  • Stuff each pasta shell with the chicken mixture and set them aside.
  • In a skillet over medium heat, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant.
  • Stir in the heavy cream and cook for an additional 2 minutes.
  • Add the Parmesan cheese, Italian seasoning, salt, black pepper, and crushed red pepper flakes (if using). Let the sauce simmer for 4-5 minutes until it slightly thickens.
  • Pour the sauce into a baking dish, arrange the stuffed pasta shells on top, and sprinkle mozzarella cheese over the shells.
  • Bake in the preheated oven for 18-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with parsley and additional red pepper flakes before serving.

Notes

For a vegetarian option, you can replace the chicken with sautéed spinach or mushrooms.
