Ingredients
  

Garlic Herb Butter Ingredients

  • 0.5 cup unsalted butter, at room temperature
  • 3 tbsp fresh parsley, roughly chopped
  • 1 tbsp herbs of choice
  • 2 tsp garlic, roughly chopped
  • 1 tsp lemon zest
  • 2 tbsp shallots, roughly chopped
  • 1 tbsp fresh lemon juice
  • 0.5 tsp salt more or less to taste
  • black pepper, to taste

Chicken Ingredients

  • 2 pounds chicken breasts 4 medium or 2 large halved into cutlets
  • salt, to taste
  • black pepper, to taste
  • 2 tbsp avocado oil or other neutral oil
  • 1 cup water if needed
  • 0.5 cup chicken broth

Instructions
 

  • In a food processor, combine all ingredients for the garlic herb butter. Process until smooth and well-combined. Set aside.
  • Season the chicken breasts on all sides with salt and pepper. Make sure to coat them well for maximum flavor.
  • Heat a large skillet over medium heat. Add avocado oil and swirl to coat the pan completely. Heat until the oil is hot and shimmering, which will help achieve a nice sear.
  • Add the chicken breasts to the skillet, working in batches if needed to avoid overcrowding. Sear the chicken breasts for 4 minutes, then check the underside for burning. If burning occurs, flip the chicken immediately; otherwise, cook for an additional minute before flipping.
  • Cook the chicken on the other side for another 4 to 5 minutes or until cooked through. Transfer the cooked chicken to a plate and let it rest. If the chicken is not fully cooked, cover the skillet with a lid, reduce the heat to low, and cook for an additional 2 to 3 minutes.
  • If there are burnt spots in the skillet, carefully pour 1 cup of water into the hot skillet. Let it boil, then pour out the water and continue with the recipe.
  • Reduce the heat to low. Pour the chicken broth into the skillet and scrape up any browned bits. Bringing the liquid to a low boil will enhance the flavor.
  • Once the liquid has reduced to about 1/3 cup, add the garlic herb butter mixture to the skillet. Stir until the butter is melted, then return the chicken to the skillet and spoon the sauce over it.
  • Once the chicken is coated with the sauce, remove the skillet from the heat. Plate the chicken with desired sides and additional sauce if desired, then serve immediately.

Notes

For a richer sauce, you can add a splash of heavy cream at the end and stir until combined.
