  • 6 pieces lamb chops
  • 0.25 cup seasoned bread crumbs
  • 1 tablespoon pecorino romano cheese, finely grated
  • 1 teaspoon lemon zest
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon fine sea salt
  • 2 cloves garlic, pressed or finely minced
  • 2 tablespoons extra virgin olive oil

Instructions
 

  • In a large pie plate or flat bowl, mix together the bread crumbs, cheese, lemon zest, black pepper, sea salt, and minced garlic until well combined.
  • Rinse the lamb chops under cold water and pat them dry with paper towels.
  • Coat both sides of each lamb chop in the bread crumb mixture, pressing gently to ensure the crumbs stick.
  • Heat 1 tablespoon of olive oil in a frying pan over medium-high heat.
  • Add 2-3 lamb chops to the pan, making sure not to overcrowd them. Cook for 2-3 minutes on each side, or until the crust is lightly browned.
  • Remove the cooked chops from the pan and set them aside. Add more olive oil if needed, and repeat the cooking process with the remaining lamb chops.
  • Serve the crispy lamb chops hot, ideally over a bed of prepared couscous or your favorite side dish.

Notes

For added flavor, consider marinating the lamb chops in olive oil, lemon juice, and herbs for a few hours before breading. You can substitute the pecorino romano cheese with parmesan if preferred.
