  • 2.5 tablespoons avocado oil
  • 1 pound shrimp, deveined and deshelled
  • 1 pound asparagus, cut into 1½-inch pieces remove bottom 1 inch
  • 1.5 tablespoons minced ginger
  • 1.5 tablespoons minced garlic
  • 0.25 teaspoon red chili flakes
  • 0.25 teaspoon Kosher salt
  • 1 tablespoon oyster sauce
  • 0.25 cup water

Instructions
 

  • In a wok or skillet over medium-high heat, add 1¼ tablespoons of avocado oil. Sauté the garlic for one minute, stirring frequently to prevent burning.
  • Add the shrimp, red chili flakes, and salt. Cook until the shrimp are pink, about 2-3 minutes, ensuring they are slightly undercooked. Remove the shrimp and garlic from the wok and place them in a bowl. Set aside.
  • In the same wok over medium-high heat, add the remaining 1¼ tablespoons of avocado oil and the ginger. Cook for one minute, then add the asparagus. Stir constantly for 2 minutes, ensuring the asparagus retains its crispness.
  • Return the shrimp mixture to the wok and cook for an additional 2 minutes, mixing well to combine the flavors.
  • Add the oyster sauce and ¼ cup of water. Cook until the liquid slightly reduces, about 2-3 minutes. Check the asparagus for doneness; it should be tender-crisp, not soft and soggy.
  • Serve immediately with jasmine rice for a complete meal.

Notes

For added flavor, you can sprinkle some sesame seeds or chopped green onions on top before serving.
