  • 30 ounces frozen shredded hash browns, thawed
  • 0.5 cup diced yellow onion
  • 10.5 ounces can cream of chicken soup
  • 1.5 cups sour cream (regular or light)
  • 0.5 cup butter, melted and divided
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2.5 cups shredded sharp cheddar cheese
  • 2 cups corn flakes, crushed

Instructions
 

  • Preheat the oven to 350°F (175°C) and coat a 13 x 9-inch baking dish with nonstick spray.
  • In a large bowl, mix thawed hash browns, diced onion, cream of chicken soup, sour cream, ¼ cup melted butter, salt, pepper, and cheddar cheese until well combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • In another bowl, combine crushed corn flakes with the remaining ¼ cup melted butter and sprinkle over the hash brown mixture.
  • Bake for 50 to 55 minutes until golden brown and bubbly. Check during the last 10 minutes to prevent over-browning.
  • Let cool slightly before serving and enjoy!

Notes

For extra flavor, mix in cooked beef, bacon, or ham. For vegetarian, use cream of mushroom soup. Can be prepared ahead of time and refrigerated.
